Banana Chocolate Chip Muffins (With Dairy-Free/Gluten-Free Option)

So easy and delicious! A great way to use those bananas that no one wants to eat anymore.

The browner the banana the better for this recipe. You can even peel the old bananas and freeze them in a plastic bag to use later. This recipe is easily adapted to dairy-free/gluten-free by substituting just a few ingredients.

Here’s what you need:

2-3 very ripe bananas

1/3 c melted butter (here’s the coconut oil I substituted)

¾ c sugar (may want to decrease to ½ c, depending on how many bananas you are using and how ripe they are)

1 tsp vanilla

1 egg, beaten

Homemade “Boxed” Brownies: Premeasured and Ready to Go

Brownies have never been easier (or yummier).

Premeasure the dry ingredients and mixing up homemade brownies are a snap!  Add the following ingredients to a plastic bag:

1 cup sugar

1/2 cup flour (here’s the gluten-free flour I substituted)

1/3 cup cocoa powder

1/4 tsp salt

1/4 tsp baking powder

Easy-Peasy Waffle and Pancake Recipe: Dairy-Free

EasePancake… waffle …one batter.  No need to decide. This recipe works just as well for both!

You can store the left over batter in the fridge to pull out and make fresh yummies all week. (and it’s dairy free!) You will need:

2 eggs

1 ¾ cups almond milk

½ cup coconut (melted) or grape seed oil

½ tsp vanilla extract
